These beverage station offerings shine as brightly as the sunset they’re meant to complement. From effervescent toast-makers to refreshing little revivers learned at our favorite barstools in town, come on in and sample some of Laguna’s swankiest suds.
Just Peachy
The only way to improve upon Zinc Café’s AM brunch bliss is with one of their glittering Zinclinis. A pretty flute involving raspberry purée, sparkling wine and orange and peach juices, this is the kind of merry mixture Gather never declines (with good reason)! In continuing with our bubbly motif, we mimicked the sparkling selections at Montage’s lovely Lobby Lounge, setting out some of our favorite bottles for our purist partygoers to enjoy.
Champagne Central Station a la Zinc Café & The Lobby Lounge at Montage Laguna Beach
Zinclinis
- 4 cups fresh-squeezed orange juice
- 3 cups fresh or bottled peach juice (such as Ceres)
- 2 pints fresh raspberries
- 1 bottle sparkling wine
First, make the raspberry purée by putting the raspberries through a chinois or by using a blender. If you use a blender, pour the blended raspberries through a sieve or fine mesh strainer and discard the seeds. Pour raspberry purée into a small pitcher.
Fill a large pitcher with orange and peach juices and stir. Pour juice mixture into a champagne flute, filling it halfway. Add sparkling wine until glass is full. Finish with a raspberry purée floater. Purée will slowly blend into the cocktail, adding a sweet and tart pop.

¡Viva La Bebida!
With its breezy beach atmosphere and south of the border proximity, Laguna and Latin-inspired beverages make a perfect pair. We tapped the margarita masters at La Sirena for their breath-of-fresh-air Cucumber Mint version, which is cool (and dangerously easy-drinking). A magnificent showpiece bar served as the central hub at Amar Santana’s downtown hotspot Broadway. An outdoor bar with a twist stocked with the basics lets classic cocktail drinkers mix up their familiar favorites.
